Yummy Chicken Tortilla soup

1 medium onion
3-4 cloves garlic
1 small can green chili's
1 can mild rotel
2 cups shredded chicken (i use rotisserie)
2 cans of beans, pinto, pink, or black
3-4 T. olive oil
1 t. cumin
1 t. chili powder
1 t. salt
3 cups chicken stock (homemade if possible)
1/2 cup frozen corn
1 c. crushed chips (I use Utz)
garnish with sour cream and cheddar or montery jack cheese

Directions:
Sautee onions in olive oil for 5 minutes, add garlic, sautee for 5 more minutes, add green chili's and rotel, sautee for 5 more minutes. Add chicken stock and shredded chicken, cumin, chili powder, and salt. Add beans and corn. Cook for 20 minutes or so on low, add corn chips, cook for 15 minutes or so, until chips dissolve and soup thickens. Garnish with sour cream and/or more chips. Enjoy!
